My New Favorite Meal

Normally I share recipes on my other blog.
This recipe, however, is special, so I wanted to share it here.

 I found the recipe here, on My New Roots. I had recently decided that poached eggs are a favorite of mine, so it didn't take long for me to love this recipe, too. The first time I made it, I used white onions instead of red, and caramelized them with butter and sugar instead of coconut oil and salt. I also used frozen spinach, because it's what we had, and I forgot to add the chili flakes.
It was still delicious.


Since then, I've made it several times and left out different ingredients each time. I've even had it with just eggs and sweet potatoes. I actually might like it best that way, because I like those two flavors the most, even though I love onions. It's also much easier if you only do those two ingredients.


Note: When poaching eggs, it is important that you use 1 Tbs. of vinegar! This keeps your egg together and your pan less messy.

I am not usually a sweet potato fan, but that sounds MAGNIFICENT. I will probably be trying this.

Gah! If I had thought anyone would like it, I would totally have made it last weekend! I really wanted to, but figured everyone would think it was weird. Curse me and my insecurities!

Mmmm that looks absolutely delicious! I didn't have all the ingredients on hand for this recipe, so i improvised. Sautéed some onions in some virgin olive oil, added some spinach leaves black pepper, sweet paprika, toasted a couple pieces of toast, poached two eggs. Mmmmm. I'm defiantly going to try this recipe after I go to the grocery store.

Meli - I know! My dorm actually had a kitchen, but I couldn't afford to use it very often :P A real kitchen is so marvelous.

I have never been brave enough to try a poached egg. For one, I've started eating eggs only since the last 2 years. (I had to make do with Bryan College cafeteria breakfast, so I learned to survive.) They also look terribly hard to make. Those other tasty foods with your egg make it look much tastier, though. I'll definitely let you know should I ever try it.

Lindsay - First...Bryan food. Ew.
Second, it's way easier than it looks! The lady from the other blog (with above recipe) does a great job explaining it. The most important part is to make sure your water is just about boiling - I wait until there are lots of bubbles on the bottom of the pan - and use one Tbs of vinegar. Basically you just wait for it. Definitely let me know if you try it!
